Salmon is a big fish of the family Salmonidae, which also includes the trout. Peculiar to the seas and rivers of Europe, is much sought after for his highly appreciated pink flesh, very tasty, and raised in farms, especially the species Salmo salar.
The Atlantic salmon return from the sea to freshwater to reproduce almost always the same river where he was born. As we near the time of procreation, the male's head changes shape, stretching and bending of the lower jaw hooked and meat gets a white coloration. While Pacific salmon die after breeding, the Atlantic is reproduced more than once.
The red color of salmon is due to a pigment called astaxanthin. Salmon is basically a white fish. The red pigment is made by algae and unicellular organisms that are ingested by shrimp of the sea, the pigment is stored in muscle or shrimp in the shell. When the shrimp are eaten by salmon, they also accumulate the pigment in their fatty tissues. As the diet of salmon is very varied, the natural salmon takes a huge variety of colors, from white or pink color to a soft red.
Remains in fresh water in the first two or three years of life before going to sea. Withstands temperatures as low in salt or fresh water. The adult salmon food is seals, bears, sharks, whales and humans.
